members' recipes

We often get requests for members' recipes at our Monthly Cafe so we will try to put together a selection.

CHOCOLATE MICROWAVE CAKE

(You need a microwaveable 18cm ( 7" ) container. I use a straight sided soufflé dish with a cake tin liner.
​Ingredients:
175g (6oz) soft margarine
​175 (6oz) caster sugar
​40g (1.5oz) cocoa powder
​150g (self raising flour)  FOR A GLUTEN FREE CAKE I USE DOVES GF SELF RAISING FLOUR & GF BAKING POWDER)
​1 teaspoon baking powder
​2 drops vanilla essence
3 tablespoons milk
3 eggs

​METHOD. Place all ingredients in a large bowl. Beat well until mixture is smooth. Spoon into container. Place in microwave on an upturned plate.
600w oven cook for 10 minutes 30 seconds
​700w oven cook for 8.5 minutes
​Leave cake to stand for 5 minutes before turning out. Cool before sifting icing sugar over top or decorate with butter icing. ENJOY!
